- 4 cups of carrots
- 1/4 cup of olive oil
- 4 tablespoons of lemon juice
- 1/4 cup of cilantro or parsley, chopped finely
- 2-4 cloves of garlic, mashed or minced
- 1 teaspoon of ground cumin
- 1/4 teaspoon of cinnamon
- 1 teaspoon of sweet paprika
- a pinch of pink salt
- Options: If you like, add some hot minced green chilies or 1/2 teaspoon of cayenne or jalapeño.
Combine all ingredients in a large bowl.
